The donair was brought to Halifax by Greek immigrants in the mid-1970s. Among those who helped shape its Canadian story was Lebanese immigrant Chawki El-Homeira, who opened his own donair shop before following Haligonian oil-patch workers to Alberta in the early 1980s. There, he changed his name to Charles Smart and opened Alberta’s first donair shop, helping establish what would go on to become the province’s unofficial food over the next four decades.

We spent two years travelling the subcontinent — not as tourists, but as students. What we brought back to Vancouver's Main Street isn't fusion food.
