The best fine dining restaurant in KW! I had the $145 tasting menu and would highly recommend it, as you get to try a lot more dishes you'd have an opportunity to, otherwise. The Iberico Pork dish was the best thing I've tasted in years -- I will be coming ... back for that alone. I love the creativity of Chef Kyle! Such unusual, bold, and yet delightful flavour pairings. I wish there was a star scoring for wine as well! We did the tasting menu with the reserve pairing and it was so good that the wine was sometimes better than the food (and the food was exquisite). Trio's food and service were stellar. My wife and I enjoyed a $145 Tasting Menu (each) and I enjoyed the reserve wine pairing ($85). Each dish was complex and creative - they were described in detail for us along with the wine pairing. The halibut and hamachi were the most ... interesting flavours. The Foccacia they bake is to die for. The veloute with crab and iberico pork were satisfying. The french cheese dessert "Delice de Bourgogne" with toasted Foccacia and black olive mostarda was perhaps the best dessert I've had in ages. We left full, but be aware the tasting menu portions are small and rich. I didn't crave more of any dish, but there is some sticker shock for a meal this expensive when the portions are for tasting. Luckily every single dish was a hit and the service was so welcoming I do dream of going back. Read more

The restaurant is amazing! Easy to say it might be the best one in town in my opinion. The food is great, unfortunately we arrived too late for the tasting menu (they serve it if you arrive by 7:00pm), but we had as a First the beet salad (great salad) and ... smoked squash agnolotti (one of my favorites of the night), as a Main the roasted celeriac and Iberico pork and for dessert the lemon cake. They also had a complimentary focaccia that was delicious. All drinks were amazing as well, but the highlight of the night was the Revolver. Amazing resturant. The best in the city for a fine dining experience. Their service was exquisite as I have a strong disliking for cilantro and you can see in the photos that the server asked the chef to put the cilantro sauce on the side for me. Every time I've ... gone I had the tasting menu which samples the various dishes on their seasonal menu instead of being a seperate menu. Every dish was well thought out in terms of flavors and story. A must try dish from their summer menu would be their Halibut. Simply the best dish I've ever had. House bread is also amazing.
